When it's done, it "pulled" by tearing the meat into shreds or small chunks using either forks or hands. The stuff is slow cooked/smoked with lots of BBQ sauce. Not sure where the "pulled" comes from except a guess that the meat is so cooked that a serving is pulled off the bone by hand rather than needing to carve it with a knife.
