Seems they are looking for a "sous-chef": I saw a similar sign some years ago, in a bijou French restaurant right in the historic centre of Bath, UK - but in that case, seeking a "sioux chef". I suspect they are either still looking, or else have since relaxed this in-the-circumstances odd requirement!
I wonder how many layers there are in that name.
